THE INITIAL SITUATION

Implementation of the Basel policy package “Package of measures for sustainable nutrition Basel-Stadt 2018-2021”.

The package of measures of the city of Basel gives high priority to the prevention of food waste in gastronomy and other areas of the food industry. As a practice partner of the city of Basel, it is our task to acquire, accompany and advise a community of Basel restaurateurs to make waste reductions possible. The project should provide measurable reductions for the participating businesses and at the same time create a beacon for the city and cantonal administration to work on the topic in the longer term with the city’s gastronomy.

OUR SOLUTION APPROACH

Community, measurements, measures and networking event

With the city and cantonal authorities behind it, 30 businesses were acquired through the Foodways and United Against Waste networks. This was achieved not least through the partnership with the local branch of GastroSuisse. The project is now underway in the following steps: Foodways’ services include:

  • Concept and process development, partner and customer acquisition
  • Detailed measurements and consulting of catering companies of all sectors (core element from our Food Save Management)
  • Process design and management, project management including COVID-19 crisis management (project stop, new planning and start)
